Until I came across Pamela’s Nut Flour Blend. I wasn’t sure what sort of texture I would get with nut flour; I thought it might be gritty. It’s not! This is a great cookie! It satisfies my cookie craving, and they are only 2 carbs per cookie, woot! As a bonus, they are gluten free, and super simple to make. ┬áThese also freeze well.

Instructions
  1. Preheat oven to 350. In a bowl, mix butter, peanut butter, vanilla, egg and sugar until well blended. Add dry ingredients and fold into mixture until thoroughly moistened. Batter will be a bit crumbly
  2. Roll small balls of dough and place on cookie sheet.
  3. Using a wet fork, push down the dough. Turn fork and repeat to form a cookie that is about 1/4 inch thick.
  4. Bake for 12 minutes and let cool a few minutes before removing from cookie sheet. Cookies become firmer when cooled.
  5. Gobble em up!
